Bigseed biscuitroot is a perennial root vegetable in the carrot family (Apiaceae) native to western North America. With roots that can be dried and later rehydrated for cooking, it's an excellent storage crop. The roots can also be dried and ground into a flour that makes tasty bread (especially when mixed with grains). The flowers of this species can come in white, yellow, or purple. Biscuitroots (there are other closely-related species) have long been a staple food of indigenous peoples in western North America, and many still forage for it.
