One of the classic open-pollinated carrot varieties, 'Red Cored Chantenay' originated in France in the 1870s, but was re-selected and released in the US by the Burpee Seed Company in 1929. Known for its sweet flavor, stocky appearance, and ability to perform in heavy soils (unlike many other carrot varieties), it is a favorite for cooking, fresh eating, or juicing. Market growers love it for its uniform appearance and clean lines. The core is unlikely to actually appear red to you, but it is often darker than the outer layers of flesh.
