Delicata squash have become incredibly popular over the past couple decades, beloved for their convenient single- or double-serving size, edible skin, and sweet and delicious flesh. They also cook up quickly because they aren't very thick. The seeds are small but delicious as well, equally good roasted in the oven or toasted quickly in a pan. The 'Honeyboat Delicata' is a new take on the classic delicata form, bred by Dr. James Baggett of Oregon State University and introduced in 1990. Like other squash, the flowers are also edible and delicious, as well as the growing tips. This is a moderate vining squash, with vines up to six feet in length. It stores well over a long period, but unlike most winter squash, and is delicious and ready to eat fresh off the vine. Did we mention this one is delicious?
