When 'Floriani Red Flint' was first introduced to the US, not long ago, it caused a minor sensation in the seed world. It was an easy-to-grow, relatively short-season corn with a beautiful red color, but what really set it apart was its flavor. Bred over generations in the Sugana Valley of Italy's alpine Trentino Province, where it's known as "spinna rossa della Valsugana," it is an old landrace developed to meet the demand for northern Italy's staple grain meal: polenta. Simple, rustic food, polenta is coarsely ground corn boiled into a porridge. It is commonly solidified in a loaf-pan, then slices of it are pan-fried to perfection, often with the addition of a sharp dry cheese (like pecorino or parmigiano). This variety matures in 90-100 days. Our seed comes from Eileen Wallding and Nicholas Pandjiris at Whistle Down Farm in Hudson, NY.
